corn in bucketsThe first buckets of freshly picked sweet corn arrived in our office today.

It’s one of the perks of working with a bunch of farmers.  Some of the extra produce ends up here.  And while I usually have tomatoes, peppers, cucumbers at home, sweet corn and zucchini are the things I’m dying to get my hands on from the farmers in our little corner of the world.

This recipe is my newest favorite.



What You’ll Need:

  • 4 ears of fresh sweet corn, husked
  • 2 tablespoons melted butter
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon chili powder
  • 1 tablespoons chopped cilantro
  • salt to taste
  • aluminum foil

What You Do:

Mix together the butter, lime juice, chili powder and cilantro in a small dish.

With one ear of sweet corn on a square of foil, pour 1/4 of the butter mixture over the ear.

Roll the ear in the foil.

Place on a grill over medium heat for 15-20 minutes, turning occasionally.
